Leivonnan raaka-aineet
Leivonnan perusraaka-aineita ovat jauhot, neste, rasva, sokeri, kananmuna, kohotusaineet, suola ja mausteet.
Jauhot
Yksi taikinan perusraaka-aineista on jauhot. Vehnäjauhoilla on parhaat leivontaominaisuudet, sillä niissä on eniten sitkoproteiinia eli gluteenia. Parhaiten leipoutuvat jauhot valmistetaan jyvän ytimestä. Karkeita jauholaatuja käytettäessä (esimerkiksi ruis-, ohra-, hirssi- ja tattarijauhot), pitää taikinaan lisätä vehnäjauhoja sitkon muodostamiseksi.
Neste
Jauhojen lisäksi taikinassa tulee olla nestettä. Neste auttaa sitkon muodostumisessa sekä hiivan kasvussa ja leivinjauheen tai soodan toiminnassa. Useimmiten leivonnassa käytetään nesteenä vettä, hedelmämehua tai maitoa. Leipien ja sämpylöiden valmistuksessa voi myös käyttää piimää, kaljaa tai kasvisten keitinlientä.
Rasva
Leivonnassa rasva antaa makua ja vaikuttaa värin muodostumiseen. Lisäksi rasva parantaa rakennetta ja säilyvyyttä sekä vaahtouttaa ja kuohkeuttaa leivonnaisia.
Sokeri
Sokeri kuohkeuttaa taikinaa ja antaa kauniin värin. Hiivataikinoissa sokeri nopeuttaa kohoamista, koska hiiva käyttää sokeria ravinnokseen. Leivonnassa käytetään erilaisia sokereita koristeluun sekä luomaan erilaisia makuja. Näitä sokereita ovat esimerkiksi tomusokeri, raesokeri, fariinisokeri, siirappi ja vanilliinisokeri.
Kananmuna
Leivonnassa kananmuna kuohkeuttaa, antaa väriä ja kohottaa. Kananmuna voi toimia myös sidosaineena. Kananmuna-allergiset tarvitsevat munattomia ruokia ja leivonnaisia.
Kohotusaineet
Leivonnassa voidaan käyttää sekä biologisia että kemiallisia kohotusaineita. Hiiva on biologinen kohotusaine. Kemiallisia kohotusaineita ovat leivinjauhe ja sooda.
Hiiva on elävää solukkoa, joka tarvitsee tietyt olosuhteet lisääntyäkseen. Tuorehiiva on harmaata ja kimmoisaa. Sitä myydään kaupoissa 50 gramman pakkauksissa. Kuivahiiva on pienirakenteista, huoneenlämmössä säilyvää hiivaa. Hiivataikinoissa kuivahiiva sekoitetaan jauhojen sekaan. Lisäksi kuivahiiva vaatii tuorehiivaa kuumemman nesteen (n. 42°C). Tuorehiiva sekoitetaan leivonnassa kädenlämpöiseen nesteeseen.
Toimiakseen hiiva tarvitsee ravintoa, ilmaa, nestettä ja lämpöä. Ravintonsa hiiva saa taikinaan lisätystä sokerista sekä jauhojen sisältämästä tärkkelyksestä ja sokerista. Ilmaa syntyy kun taikinaa alustetaan, nesteenä voi olla esimerkiksi vettä, maitoa tai heraa. Lämpöä hiiva saa nesteestä sekä taikinan kohotusolosuhteista.
Leivinjauhe- ja soodataikinat kohoavat, kun nesteen ja uunin lämmön vaikutuksesta syntyy hiilidioksidia ja vesihöyryä. Näitä taikinoita ei tarvitse kohottaa kuten hiivataikinoita.
Ruokasooda on natriumkarbonaattia, jota käytetään vain leivonnaisiin, jossa on jotain hapanta. Leivinjauhe on ruokasoodan ja happamien aineiden seos ja sitä käytetään makeissa leivonnaisissa, kuten murotaikinoissa.
Suola
Leivonnassa suola antaa makua ja parantaa sitkoa.
Mausteet
Erilaiset mausteet tuovat vaihtelua ja antavat uusia makuja tuttuihinkin leivonnaisiin. Tavallisimmat leipien leivonnassa käytetyt mausteet ovat kumina, anis ja fenkoli. Vaihtelua leipiin saa lisäämällä taikinaan vaikka mysliä ja rusinoita.
Pullan mausteena käytetään tavallisimmin kardemummaa. Lisää makua pulliin tuo täytteissä käytetyt mausteet. Niitä voivat olla esimerkiksi kaneli, kaakaojauhe, vanilliinisokeri tai sitruuna. Myös rusinat maustavat pullia. Eri vuodenaikoina, kuten pääsiäisenä ja jouluna, käytetään erilaisia mausteita. Juhlaviin pulliin lisätään sahramia antamaan väriä ja makua. Piparkakkuihin käytetään usein kanelia, neilikkaa, inkivääriä ja pomeranssinkuorta.
