Jauhot

Yksi taikinan perusraaka-aineista on jauhot. Vehnäjauhoilla on parhaat leivontaominaisuudet, sillä niissä on eniten sitkoproteiinia eli gluteenia. Parhaiten leipoutuvat jauhot valmistetaan jyvän ytimestä. Karkeita jauholaatuja käytettäessä (esimerkiksi ruis-, ohra-, hirssi- ja tattarijauhot), pitää taikinaan lisätä vehnäjauhoja sitkon muodostamiseksi.
